Convert printer input into a text file?

I have a remote device (called a datacenter) which prints to a serial line printer.

I also have a remote PC which can print to the same device.

Is there a way to replace the printer with another PC so that the text intended for the printer is now written into a file on that PC?

Text sent to a line printer should just be ASCII, shouldn't it?
