Controlling VS8 patch deployment through the ePO

How do you control things so that I can check in a patch for Virus Scan but not have clients automatically update (yet they still update their DATs/engines)?

On the update task properties under task settings all I have is DATs and Engines ticked, there isn't even an option under Pathes/Service Packs for vs8 (there are options there for vs7 though).

This morning I checked in vs8 patch 7, which I didn't notice needs a reboot but wasn't expecting clients to update themselves to it anyway. By the time I realised a lot of people were getting reboot prompts and I ended up having to remove the package from the repository.

Problem is I'm not sure why it happened or how to stop it in future so that I can just check in patches but do a controlled deployment to a test group. As well as the update agent task I also have a deployment task that runs regularly which is set to install ePO agent 3.5 and VS 8.0.0, this runs every 45 mins or so and is designed to reinstall agents/VS if the user uninstalls them or on a new build with the agent on they automatically get pushed VS. Is this deployment task what triggered the clients to update to the patch?
