You're out of luck. The ability to change the Backcolor was introduced in VFP 8.0.
The official answer is that you should leave it to the users to decide their preferred colours, which they do in Control Panel.
An alternative is to make the caption into a graphic, and to use this for the button's Picture property. The graphic can then have any colours you like.
