I am upgrading my SQL 7 to SQL2K. When i was upgrading, one of the screen was to select which collation method to use : windows or SQL. Does nayone know what theses collation means? And which one one do i have to select?

I think the following link describes the difference fairly well. If you follow their advice you will probably use windows collation. They say "SQL Server defaults to the Windows collation setting it detects during installation; you should only override that setting if you need to match it to that of other machines with which your system will be communicating."
