Define capacity.
You can 'display system customer-options' and see how many stations you're licensed for. Generally stations can be of any type and there's no different analog/digital/IP though you can have situations if you were a hotel where you might buy a boatload of 'analog' station licenses but it's not the norm.
Now, nothing stops you from having 1 G450 with 160 DSPs and 8x PRI with >160 B channels in it that 200 IP phones would never all be able to use at once as each conversion IP-->PRI would need 1 DSP.

Add 103 up to 685.
IP phones register to CM. You can have 30000 on a CM with 1 G430. They won't all get dial tone at the same time. If you have SIP trunks and they're all shuffling, direct audio, no transcoding 711/729, then you can have those 30000 phones on 30000 SIP trunks not using any DSPs.
It's all a matter of what kind of traffic you're planning to handle.
