Changed Servers. Need to Get Exchange Info from Old Server.

We installed a new SBS 2003 server and disconnected the old SBS 2003 server from the network. Of 10 users, 7 are using Outlook with pop mail and 3 are configured for pop and Exchange, although all mail comes through pop. When I try to delete the Exchange account, I cannot access Outlook at all on one PC and on the other his personal folders and all the emails in them disappear. On the 3rd he gets the error that he cannot connect to Exchange.

How can I get his folders from the old SBS and load them into his pst file and not use Exchange (which is not configured on the new server)?

Desperate. TIA.
 
Sorry, by offline, I just mean not on the network, so as to avoid any conflicts with your new setup.
