Change Subject - Outlook 97 / 2000

Hi

Is it possible to change the subject of an e-mail? My dad get loads of e-mail at work with subjects like 'ref meeting 01.01.01' which, in a couple of months time would mean absolutely nothing to him so he would have to open the e-mail to find out what it was about. With quite a few of these e-mail being saved for future reference, this is getting to be a problem.
