Try A/R - Customer Maintenance
There is a "Paperless..." Button. Select S/O Invoice, then the email tab. You should be able to setup and modify the email address's from here.

Just realized that you are talking about the "From" email address. I think it is in Paperless office - setup
For the "From" email address - try Form Maintenaince.
and for the subject I believe you make changes in "Electronic Delivery Message Maintenaince". Modify the appropriate form that you are emailing.
