Try shutting down and unpluging both cd drives and rebooting the machine. Then shut down and reconnect the drives and boot the machine. this will get your drives back.
Which I would follow even if you did not uninstall EZ CD. If you look at this site there is a .reg patch already available to make the change, plus some helpful suggestions on IDE channel settings. Scroll down and look at Problem #2:
try going into administrative tools (in the control panel) and into computer management to see if the drives just have no drive letters assigned (its in storage -- drive management)
also try entering the BIOS setting when booting up the computer to make sure that the Drives are actually connected
