I have an e-mail account (support@domain.com) that I have assigned to a public folder called "Support" on my Exchange 2003 server for my Customer Support department.

When a Customer Support user sends a message from this public folder to a customer I want it to come from the support@domain.com e-mail and not thier personal e-mail. Can this be done? Or maybe there's another way of doing this.
Any suggestions are appreciated.

This can be done. You need to give the relevant users send as permissions to the folder in System Manager the the users have to add the from field to the outgoing e-mail and specify the public folder as the sender!

Hope this helps!
