Bridgehead server or not?

I have my new Exchange 2003 server up and running with the old 5.5 server still needed for the Internet Mail Service. I would like to eliminate that part and route mail from 2003 via creating a new SMTP connector. I found a really good how to article MS Article ID 883407. The questions I have is.... What is a bridgehead server and do I need to enter one? Can this be any SMTP server I have?

 
Bridgehead is the server that does your inbound and outbound SMTP connectivity.
