Bip ring for extensions using headset 1

Is there any way to bip incoming calls for extensions using headset and not ring on their deskphones?

Enable HEADSETBIDIR if IP phone, if digital it is enabled automatically. Switch off ringtone on the phone or try to set call appearance to not ring.

Maybe it's because the deskphones are 1608-I and not 96xx?

Correct. It's only supported on 96x1 series.
