Best Practices for Exchange 2000 Entrprise?

I am looking for guide on best practices for installing exchange 2000 enterprise and after the installation.
looking for such things as:
- Is proper to save log files to a different drive than the one the application is loaded on?
- How often should you off-line defrag?
- Etc.

You need to look at FAQ sections in this site and msexchange.org

You should also invest in an Exchange Administrators Guide. Something like Bill Stanek's book or W Glenn's book.

Exchange Administrator's Cookbook is also a good one to have.

To answer specifics:

Log files? Absolutely.
Offline? Pretty much never unless you have a problem.
 
Any book by Tony Redmond is worth it's weight in gold. My old site, msexchange.org has a ton of stuff, as does YOU HAD ME AT EHLO ( a blog from a guy at Microsoft, and the Exchange blog at
Exchange does an online defrag every day. So, as Zelandakh mentions, unless there is a problem, you're not likely going to need to run it offline.
