Backup MX records

Hi everyone, we have are a small company using exchange 2003. Can anyone recommend a backup mail hosting company with good support to serve as a holding tank while our internet connection is unavailable. Verio hosts our main website and says they cannot help us.

You mention that verio hosts your website. Are they also your ISP? If not, ask your ISP. A lot of ISPs nowadays give you the option to put their server as a secondary mx for free.
Should your mail server/conneciton be down, all emails get sent to the secondary mx record, in this case your ISP who holds the email and trys at certain intervals to release it back to your mail server.
