Backup Exec 12

Hi I am trialing v 12 I have had a look at the admin guide and find it a bit daunting, could anyone tell me if and how I can create a job where I would like to run a backup every night of selected files and exchange server. At the moment I Have 5 sets of 5 tapes for a 5 week rotation in an autoloader which works well for me, is there a way that I can get it to use a certain tape each night? or don't I need to do that?

I am gettint a little confused about backup sets, polices etc.
