Any ideas on Best Pactice backup tipes for Exch2k3?
What folders?

so, the Exchsvr folder minus the MDBdata?

You'll usually find a file system backup fails to catch open log files and the databases.

Something with a proper database agent or mailbox agent will do the job better. You could run that alongside a File System backup which avoids the Stores.
