I know this could be done with 5.5 but I am am not sure how to do it with 2000. What i would like to do is have the email address automatically be assigned in a certain format. first letter of the first name and then the last name (Bob Jones would be bjones@domain.com). How can i do this with 2000?

What you want should be default I believe if the logon name is "bjones".
Other than that you can control this via a recipient policy in ESM.
If you wanted say firstname.lastname the format would be %g.%s@yourdomain.com
