Is it possible to take a letter that is in my sent folder in Outlook 2000 and, create a new e-mail a week later, and attach the original one from my sent folder?

Yes.
It can be done via drag + drop.
That is when you start the new mail (it usually starts in a new window) - drag the required item
from the otlook folder to the new mail window.

there is another way - I'm using Outlook 2002 and the
select attachment icon (the paper clip) has a little arrow on it.
click on the arrow and you will be given a choice of
'attach file' or 'attach item'.
If you select 'sttach item' you will be given a list
of the outlook folders to browse through (as apposed to the
usual file select dialog box). You just go to the 'Sent' folder and select the required item(s) you want to send as attachments.
I assume this also works on Outlook 2000 but I have not
used that program for some months.
