Arrange Icons in "File Open" dialog

Whenever I select File Open within an application, the files/folders are displayed in order of the most recently edited (I think). How can I make this default back to alphabetical order?

In most Microsoft applications, once you have selected open there sould be an icon for views, select this then arrange icons -> by Name

Thanks but that only seems to work for the current session - it's the same with windows explorer. I've tried arranging the icons by name, then setting all folders to look like the current one but if I close explorer and reopen it it's gone back to date order. I'm supposed to be a techie too!
