Are two routers in a row better than a single router when it comes to security? Or a single router is more than enough?

Routers don't give you any extra security. Routers can only do very simple filtering.
Use one router and spend the rest of your money on a firewall.

On a router, you would use an IP access list to filter incoming packets. So, two routers back to back is a mis-directed use of funds.

Router to route traffic, firewall and/or Intrusion Detection System to block unwanted materials or intruders.

My 2 Cents.

Social engineering, coupled with greed, is the easiest way to subvert any security!
