How can I define where to locate the attached files in e-mails I send?

It can be on top of the text, in the bottom, and in the middle, etc. Right?

And how can I define how it will look like?

Depends on which format you are using to compose your mail.

HTML and Plain text will always display the attachment at the bottom in a sort of pane window in Outlook. RTF will put it where ever you decide to put it.
