Any Backup ideas for MS Exchange Server 2003

I not really fimiliar with MS Exchange and I want to get seom ideas on how to backup my MS Exchange 2003 so that if the server went down I can bring it back up with the lowest downtime. I ghosted the server but the dump is never going to be up to date so I need a better way. It is on a Windows 2000 server.
 
ntbackup. If it is good enough for MS, should be good enough for merely mortals like us.
 
Start, Run, ntbackup. There is a wizard that walks you through - you need to back up the Exchange Information Store.
 
So lets say for example, because this has happened before, that the OS on the server is hosed and I am not able to get into it. How would I be able to get the Server online with the lasted backup of Exchange?
