Aloha theft

We've recently had a big issue with theft. I've traced the transferring of many tables and overall shadiness to a particular server. This is someone who has been nothing but loyal for three years, and I frankly can't believe it is her. I had to confront her with my findings though. She insisted upon her innocence and even suggested a possible suspect. This is someone with a past history of theft and it very well could be him. All the activity is done under her number though. She swears other people know her number so what's to stop him from looking over her shoulder as she enters her code to login, hence giving him access to her number too? What I need to know is is there a way to prove her innocence and this other server's guilt if he's been using her number all this time? She herself has approached me two weeks ago about how she feels her tips were way too low than what was adding up after checkout. I can see how the male server would do stuff under her number to suggest she was the one stealing, but how can I find out what he's done to alter her own money? I hope this makes sense. I really do value this girl working here, and I don't want it to be her, but I don't know what to look for if he is in fact using her number
 
1st thing to consider is using ID cards or finger print scanners for employee access.
Is it your goal to stop or catch the thief.

Change her #; does the activity stop?
Do your audit trail reports indicate when her # is being used IE: date/time,table#,items being ordered,pos# etc.
Does the activity only occur when both she and he are working?
Does any activity occur when only he is working, not her?
If he uses her #, don't the bar and kitchen tickets print her name on all the dupes BUT he picks up the drinks and food?
That would appear strange to other staff members...

Do you have camera's?
Are they interfaced with your POS?
That would show him in front of the POS but her # being logged on.

Bear this in mind, in my 40 years in the industry, the thief is 80% likely to have the following attributes; loyal employee, works when others are sick, never takes time off, guests love them, always happy. That's been my experience.
 
Yep, cameras and/or ID cards are your best bet. POS systems can help track down all kinds of cheating, but they're no help determining who's physically entering the order. One suggestion, if you go with cards for server login implement a replacement fee and let everyone know. We do a first replacement is free, after that $5. You could also have the staff turn them in with their end of shift paperwork and keep them in the manager's office.
