By the looks of it, your end of days are running correctly, but are just in the future. There's a couple of things you will need to do to correct this. First thing is to get your site back on the correct date of business. This should be done on an empty TRANS.LOG so that you don't go corrupting anything.
1) Stop the terminals from loading. This can be done any number of ways, but the easiest is to use the "Stop Front of House" menu option in Aloha Manager, or to create an empty file in %IBERDIR%\TMP
2) Delete all the log files from %IBERDIR%\Data. This will ensure that you will get anything weird coming up in future reports.
3) In %IBERDIR%\NEWDATA, edit Aloha.INI. Find the line labeled "DOB=" Adjust that line to reflect the proper date of business (Presumably the day which you are making the changes on).
4) From Aloha Manager, perform a "Refresh Data"
5) Start the front of house either by using the menu option in Aloha Manager, or by deleting the "STOP" file from %IBERDIR%\TMP
6) Verify that your terminals come back up with the correct DOB / SysDate.
Now that you are back to the correct DOB, you can go recovering your prior dated sub-folders (Assuming they have pertinent data in them).
%IBERDIR% is the environmental variable pointing to your Aloha installation folder. This is different in some environments, so I used the environmental variable here.
