What are the main, key advantages of the 3600 series router over the 2600? They both seem to have quite similar features...I presume the 3600 is aimed at a higher level of traffic/use?

Advantages of a 3600 series over a 2600 series

3600 has larger CPU and has larger memory capacaties. 3600 series can except fast ethernet modules were the 2600 non XM models can only do 10 with full duplex. 2600XM is fast ethernet and would be better choice than the 3600. If your are looking for a feature rich router then you might consider the 2800 or 3800 series. It really deppends on the budget you have.
