Will admin login override group policy?
 
No.

If you look at the policy items in detail you will often see exclusions made, or policy items that permit, and a parallel item that denies, a certain action.

There are exclusions made in this way for the Administrator, and for the Group Administrators.

But the Group Policy applies in its entirety to all users.

You might consider looking at the "anyone but the Administrator" trick using NTFS permissions to exclude the Administrator from the application of Group Policy:
