In the fields that I have created to enter information,
what I am trying to do is set the field up so that the
user has to dbl click to enter new information or edit
information. How is that done.

 
double click on what?? the field, the form, what??

the way i would do this, it to set the field's to locked, then on the double click event for what ever it is you want to be double clicked to change the locked setting to false...
