go into ccma, scripting, variables, and look at the date variables and change it there. Provided they scripted your call center this way, you may also, have to look in CP or MM or whatever vm system you're using for holidays date.
You can also always manually script a date/time easily (and comment it out). I do it both ways (variable and manual) - it would be IF (DATE = DECEMBER 25th) AND (TIME =17:00..23:59) THEN .... whatever you want. I used the manual scripting since I was OOO on the 26th and 27th and a group wanted different times and dates and we only use one special variable.
