802.11 wireless networks

i'm really tempted to get a wireless lan set up at home but i'm a bit confused over some of the hardware on offer.
i know that it's possible to have a wireless network without having a central access point but at what numbers does an access point become essential? is it possible to have 3 wireless cards working together in a net? does one then become an access point? is being an access point a feature i should look for - if so what is it's proper name? (i think i'm talking about the 'ad-hoc' modes here)
