Can someone tell me if it is possible to use regular CAT6e wiring to connect workstations on a 10 GB network.... or is that something that is not even being done now.... 10 gigabit to the workstation? Thanks

So, yes, it can be done, but you won't get the kind of distance you currently get for 1Gb.
