Wouldnt it have been a lot easier to have all the users on the other domains fwd the mail to there primary domain ? i.e if a mail comes to a@abc.com fwd it to a@xyz.com outlook rules could be used even.

what your previous ISP gave you was a NAT service. Thats where the Router hides many IPs (192.x.x.1-192.x.x.255 on the internal network) behind 1 Real IP as you call it. so you can have may Clients and only one real IP ,then the router would port forward your VPN thru to the correct internal IP...
