How do I unassosociate GIMP with all my files?
If these files are still associated with GIMP, then this is a bug in the uninstaller. You should consider sending a big report to the gimp-win maintainers. To unassociate I guess you would have to do this by hand in the filemanager. In Tools there is the Folders Options, which let you edit the... -

Just cut (or copy) and paste it into the other picture. This will create a new floating selection (pasted layer). -

Newbie help
The thumbnails are not generated on-the-fly but are stored on disk. That's why your thumbnail looks ok, since it was generated from your picture before it got messed up. You could try the resynthesizer plug-in (http://www.logarithmic.net/pfh/resynthesizer) but it won't be easy. -
