I had to do the same thing last week. You can right-click on the name and choose rename. It will then bring up a rename dialog box and will change the Full Name. You will then need to change the display name listed below that.
Just right click on her name in Active Directory, choose properties, and make the changes in the General tab. You can also add another email reflecting her new name.
Right click on Network Neigborhood, Choose Properties, and change Windows Logon to Client for Microsoft Networks. You may also need to Check and enter the Domain under Client for Microsoft Networks.
