Just retracing steps today and trying anything I could, I (for the third or fourth time) stopped the BE services and restarted them and tried again, and viola! I can now access the Mailboxes.
Problem solved. Now, if only I felt more confident as to what the exact solution was.
I can attach to the "Microsoft Information Store" and to the "Microsoft Site Replication Service" (and all subsequent folders within each of those) with no problem. It's just the "Microsoft Exchange Mailboxes" that is giving me issues connecting to.
Sounds like Sarah's problem was different than mine.
In Backup Selections, I expand the exchange server and when I try to click on "Microsoft Exchange Mailboxes" to expand it, the Attach to Device dialog box comes up and that's where my issue is. Still.
