As a programmer, I would use something like WebMagik II to write my own import and do it anyway I wanted.
In the limitations of the GM's import, have you tried replacing line breaks with chr(10) + chr(13), or similar padding techniques so that the input APPEARS to be one line, but in affects...

First, back up the main database
Then, back up the laptop
THEN do your sync
Then you will know.
Don't dance around a problem because it MIGHT be a problem. Attack it and settle it - if you get a bungled database because, for example, you cleaned up the main one with Access and your sync...

I am going to advice you to take a look at something like Inaport or GoldBox
You need more sophisticated tools than come with GoldMine, unfortunately
Note: I don't sell either of these. My recommendation is based on personal experience

DOn't do it at all - as I wrote in my book on GOldSync, it saves so little time and causes so many difficulties to have the package waiting for the end user, that it isn't worth it

You can just rename the license.dbf to Old and then, when it prompts you for a new license, enter your undocked license info

I don't know what version you are on - it could be that the time difference is causing a sync that is back-timed 3 hours,meaning that if one person syncs twice in that period, he isn't seeing updates.
You could test that by having one person wait a day, then having person in NY sync, and then...
Look at our WebMagik II program, and WebMagik X
These are ASP.Net, however the WebMagik X can handle non-ASP.Net queries using HTML
I can tell you this, after developing the thing: what is going to kill you is thread integrity and rights issues, and this program solves both
