With 6.x Symantec added unified logging as they are going to move away from the legacy directory and file method of logging. While most processes will log into their respective directory as MrJazz mentioned, this may not be the case with some newer processes.

You can backup everything on SQL using the $ALL parameter which is in the scripts by default. The MS SQL Agent Guide discusses this, I recommend taking a look at that.

If this is 6.x version, your catalog backups are not overwritten, only appended to the tape(s) being used by the catalog backups, just like a normal backup job. I assume this is the case because you cannot do cumulative catalog backups in any prior version of NBU.

You can still move the media as you would if the media server was there by using the same bpmedia -movedb command. I have done this successfully despite the old media server being offline/gone.

I have never done this, so take this with caution lol. First, I'd backup the catalog and copy it somewhere. Also copy any/all scripts, etc. that always get overwritten when you install a new version or a patch.
Next, I'd upgrade to the same level of Master server that your media server...
You can't get what you're asking without setting up and running a script. You are getting an email for each failure. Each time the job retries and fails, you are going to get an email, whether that's one or 10.
I would take a close look at your Backup Windows in your schedules. If the time frame is open, the backups can run during that time, even multiple backups.
