It sounds like you are trying to group dates. In the design view of the report go to Sorting and Grouping. I think this may be of assistance. Since there are choices there, try various opitions. Even if this for some reason doesn't solve your problem, you will learn.

The form you are trying to create, does it have a Control Source? Is the from you are trying to create based on a table or query? If it is a query, try runing the query by itslef.
There isn't anything that I can think of that you could do to a table and not have the fields show up on a form...
Storing a calculated field is not a good idea. It goes against the rules of normalization. Based on the information given, it is not necessary since your result can alwayse be calculated on the fly either in a form or report.

Not sure how not that long really is! Since you have users that want something different, you may just have to decide for them.
One other thing you might try is making the font and point sizes smaller of all your objects thus trying to fit everything onto one page.
