I use esXpress to backup the VMs and ARCserve for file level backup. I believe the next version of esXpress will support file level backups from virtual machines.
I've looked at CommVault and it is very nice but also very expensive.

The expansion will be faster if you have the battery-backed write cache installed. If you do add that many drives, I suggest migrating to RAID 6 which gives you the ability to loose two drives simultaneously. If it's a critical machine, using one or two drives as hot spares is a good...
I've done it several times with Ultimate P2V (BartPE with free tools) and had no problems. I recommend that you keep the VM-NIC disabled on the virtual machine until you get the VMware tools installed and everything is configured exactly as the physical machine was.

You cannot use IDE storage with VMware ESX. You may be able to find a supported RAID controller which will allow you to use IDE disks, such as 3Ware.
