Your reply resolved my issue. My users were accessing OWA via the IP address not the FQDN. As this is new to us I didn't realize they could also access via exchange.domain.com.
I changed the certificate to reflect the correct information, imported it and all is well.

I agree that it sounds like an external DNS issue. I think it's unlikely (but certainly not impossible) that some DNS servers have not updated their records yet (5 days since the MX record change).
If that is the case I should see the amount of mail picked up by the server at my backup MX...

Thanks to all who helped. After going through everything again, I found that during the changeover the DNS was set pointing to the ISP's external DNS server. Corrected this by setting up DNS on the DC and performance improved dramatically.
I don't know how they got it to be the DC WITHOUT a DNS...
