I'm a complete and utter newbie when it comes to Windows 2000 Server, I have never used NT4, I have used UNIX in the past though, so 'Dummies' books are not for me.

Can anyone can recommend some decent books on the subject?

So, nobody knows of any decent books on the subject?

Who needs books anyway? Isn't there a Windows 2000 Server Tutorial-Type website?

You could try searching Amazon.com.  I haven't personally seen any on 2K yet.  If you throw out Active Directory and MS Management Console, Win2K is very similar to NT4.  You could get up to speed on most of the concepts and termiology there with "Mastering Windows NT Server 4" by Mark Minasi.  That's probably the definitive work.  He's probably working ona Win2K version but I haven't seen one yet.

Just read a review that claims this one is good.

"The Ultimate Windows 2000 System Administrator's Guide" by Robert Williams and Mark Walla.  (Addison Wesley)

Might be worth a look.
